## You wish to perform an analysis and/or a dosage of iron II gluconate

First of all, ferrous gluconate or iron(II) gluconate is a food additive (E579) that acts as a sequestering agent – a natural or synthetic stabiliser -, food colouring and food supplement. Indeed, it is found in olives as well as in food supplements.

Thus, it is listed by the Codex Alimentarius in three functional classes: as a pH regulator, as a colouring agent and as a food preservative.

However, it can have harmful effects if present in very high doses and it is therefore necessary to be able to determine its precise concentration.
