Chitosan in a few words

Chitosan is a biopolymer derived from chitin. It is the main component of the shell of crustaceans such as crabs, shrimps and lobsters. This natural polymer is obtained from chitin by a process of deacetylation. During this process the acetyl groups are removed from the molecule to form chitosan.
